Sometimes leftover salmon can taste as good as freshly cooked salmon, especially if you have just finished a satisfying ski. Earlier this season I shared a couple of bites of leftover Bristol Bay Naknek River King Salmon belly with my friend Jen in the Eaglecrest parking lot after we had taken some runs together and gone for a skate ski. Her expression of surprise and satisfaction at the rich flavor of the fish were almost as gratifying as the taste in my own mouth.
My day started early, as all Mondays do, and I am ready to build a sandwich with some of our leftover Naknek River King Salmon and lightly toasted homemade bread that our friend Sarah brought us the other night. Some mayo, sweet relish, and sliced tomatoes are all that is needed to make it delightful.
The only thing that could bring it even higher would be a nice Willamette Valley Pinot Noir. Mmmmmm…

That sandwich looks so good, I think I drooled a little bit. Salmon is the one fish I NEVER get sick of. In fact, I think I’m going to go pull a fillet out of the freezer right now! Thanks for the inspiration.

Thanks! It is not easy photographing food. Now I understand why there are dedicated food stylists.
I don’t deliver, but I will let you in on one secret that might jazz up your next salmon sandwich. If you are a bacon lover you should add a couple of pieces of crispy bacon. It will make your sandwich taste like its made with smoked fish.
